There’s nothing more comforting than a warm bowl of soup at this time of year. Especially when served in our beautiful fine bone china bowls... designed to make every scoop feel a little more luxurious.
With that in mind, I thought I’d share one of my favourite, simple-yet-scrumptious soup recipes...
ROASTED BUTTERNUT SQUASH SOUP
Ingredients:
- 1 butternut squash (peeled and diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- Oil for roasting & frying
- 1 tbsp butter
- 850ml vegetable stock
- 4 tbsp crème fraîche, plus more to serve
- Salt and pepper to taste
Instructions:
- Roast the squash: Preheat your oven to 200/180 fan. Toss diced butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes until tender and golden.
- Sauté the onions and garlic: Melt the butter with a bit of olive oil over medium heat. Add the onions and garlic & cook until soft.
- Blend the soup: Add roasted butternut squash, vegetable stock & crème fraîche to the pan, then blend until smooth using a hand blender.
- Serve and enjoy: Warm gently, if required, then pour into your favourite bowl and top with swirls of crème fraîche. I like to add croutons, fresh herbs, chilli flakes or pumpkin seeds depending on my mood!
